Salted Almond Butter Cups



I am allergic to peanuts, so I have never been able to indulge in a Reese's Peanut Butter Cup, but I'll bet you these come pretty close.



Plus, unlike a Reese's cup, these cups are vegan, gluten-free, and dairy-free!




Also, you can customize these by using whatever type of nut butter you want. Chunky, smooth, even homemade if you're feeling ambitious!



Almonds are an incredible superfood to throw into every day treats like these cups. They offer a punch of antioxidant action and a generous amount of magnesium!


Sprinkle a bit of salt on top to make these a gourmet, chocolaty, feel-good indulgence.


Ingredients:

7 oz. dark chocolate chips 1/2 cup almond butter 2 Tbsp. maple syrup

1-2 Tbsp. powdered sugar 1/2 tsp. vanilla extract 1/4 tsp. fine grain salt sea salt flakes for topping (Maldon, pink Himalayan sea salt, etc.)

Directions:

Place the chocolate chips in a microwave-safe bowl. Microwave for 1-2 minute intervals, stirring between, until completely melted.

Line six muffin cups. Spoon about a teaspoon of melted chocolate into each cup.

Mix the almond butter, syrup, powdered sugar, vanilla and salt together until smooth for the filling (you could also add fun spices like cinnamon, cloves, or even cayenne pepper!)

Scoop out a teaspoon of the almond butter mixture and gently roll it into a ball between your palms. Flatten it out a bit and place it on top of the thin chocolate puddle. Repeat so that there is an almond butter ball in each cup. Spoon remaining chocolate on top of each almond butter ball to cover completely. Add a little pinch of flaked sea salt on top of each one and chill in the fridge to set.
