One of my favorite meals to wake up to is a hearty, piping-hot bowl of oatmeal... except in the summertime!
This is a nice, cool alternative for when the weather is hot and muggy outside!
This recipe is magical -- you simply toss all of the ingredients into a bowl at night, forget about it, and wake up to a beautiful, healthy breakfast! What could be better than that?
Plus, you can customize this recipe with whatever healthy add-ins float your boat! Try out fresh pineapple juice for a tropical twist, add in spiced pecans and a bit of canned pumpkin when the leaves start to turn, comment below what combinations you try!
Ingredients:
1 gala apple, grated
1 cup rolled oats
1/2 cup of your favorite juice
1/2 cup coconut or almond yogurt
Large pinch ground cinnamon
A dash of cloves
1/2 cup nuts and dried fruits of your choice
1 Tbs. chia seeds (optional)
Your favorite fruit (for serving)
Directions:
Combine all of the ingredients except for the fresh fruit in a container with a lid. Place in the fridge overnight. In the morning, scoop into bowls and top with fresh fruit.
