Vegan Apple Blender Pancakes

I've never been a morning person. Which is why I often opt for simple grab-and-go breakfast solutions (think oatmeal, coconut yogurt, fruit). However, sometimes I'm in the mood for something more luxurious.



That's where this recipe comes in... with little more than the push of a button I can have this stack of steamy pancakes in front of me. Snazzy!



Seriously, you just dump all of the ingredients in a high-speed blender. Pour the batter in a pan, and then serve!



They have a nice, subtle apple-cinnamon-spice flavoring, which goes great with all sorts of different toppings: maple syrup, coconut oil, sliced bananas, fresh blueberries... the possibilities are endless!


Ingredients:

1 1/2 cups almond milk 1 1/2 tsp. coconut oil 1 apple, cored and quartered (peel on!) 1 1/2 tsp. baking powder 1/2 tsp. salt 2 tablespoons sugar 1/2 tsp. cinnamon 1/2 tsp. cloves 1 tsp. vanilla extract 1 cup whole wheat flour

Directions:

Mix all of the ingredients together in the blender. Blend on "batter" setting.  Heat a lightly greased skillet over medium high heat and cook pancakes until golden brown on each side.  Serve with butter and maple syrup. Makes about 10 pancakes (depending on how big you make them)
