Banana Bread Energy Bites (V)


I make this recipe all the time -- and what I love about it is it is so easy to adapt. For example, throw in some cacao nibs, you get chocolate chip banana bread bites! Sub in hazelnuts for almonds and you have this wonderful, nutella-esque treat!



They're also perfect for stashing away for a quick bite on the go, come together in minutes, and taste suspiciously like banana bread (despite being raw and vegan).


Ingredients:

1 cup nuts (I used roasted almonds) 1 cup pitted dates 1 banana 1 Tbs. coconut oil 1 tsp vanilla

Cinnamon, nutmeg, cloves


Directions:

Slice the banana and place it on a microwave-safe plate. Microwave on 60% power for about 3-7 minutes, until most of the moisture has boiled out of the banana.


Scrape banana into the blender or food processor.  Place nuts into blender and pulse until they are coarsely chopped.


Add dates, coconut oil, vanilla, and coconut powder and pulse until the mixture sticks  together by itself.  It should be sticky enough to roll into balls, but not so sticky it doesn't hold its shape. 


If it is too sticky, add more nuts, if it is too dry, add more coconut oil until you reach the desired consistency.


Roll the mixture into balls and place into the fridge to set.
